Which honey for what.
The most common question after price is which one to take. The answer depends on what you will do with it: which goes in tea, which on a spoon, and which with cheese.
First-time orders usually come with a request for a recommendation: take this one or that one, whichever is best. Our three varieties differ in taste and in where they work best, so the dearer one can be the wrong choice for what you actually need.
Here is a short guide based on how honey really gets used.
Acacia: when the honey should not take over
The palest we have, almost colourless, mild and clean. Sweet straight away, with no bitter finish and barely any floral scent. It leaves no trace in the throat.
Its main quality is that it does not cover whatever it goes with.
- In tea that is not boiling.
- On bread with butter.
- In yoghurt and on pancakes.
- For anyone who dislikes strong flavours.
It is also the slowest to set and can stay clear for up to a year, which makes it the easiest choice for anyone who finds set honey annoying. Acacia honey
Vlasina: the spoonful in the morning
Deep amber, full and rounded. It opens like a meadow, floral and warm, and closes on the resinous note of the forest. That is because it is genuinely both: meadow and forest honey the bees joined themselves inside the hive, on the slopes of Čemernik.
If you eat honey on its own, off a spoon, this is the one with the most to say.
A practical advantage: it takes heat better than acacia, which makes it the better choice for a marinade and for anything where honey goes into something warm. Vlasina honey
Forest: with cheese, not with pancakes
Darker, denser and less sweet than people expect, with a note of resin and something baked. It comes from beech and fir honeydew rather than from blossom.
- With mature, strong cheese and walnut.
- In red wine in winter.
- Too heavy for pancakes and sweet puddings.
Few people like it at first and then come back for it. Worth knowing too that it is not there every year, because honeydew depends on aphids. More in the piece on honeydew honey.
