Slopes of Čemernik · 1 200 m · June—August
This blend was not made by people.
On the slopes of Čemernik the meadow and the forest sit side by side. In a single day the bees work both blossom and honeydew, so the two honeys join inside the hive, before anyone touches them.

How it tastes
Full, round, with a dark finish.
- In the mouth
- Deep amber. It opens like a meadow, floral and warm, and closes on the resinous note of the forest.
- Goes with
- The spoon-in-the-morning honey. Good in a marinade too — it takes heat better than acacia.
- Crystallisation
- Three to six months, a finer grain than pure meadow honey. Returns to liquid at 40 °C, no higher.

Nothing is blended after extraction.
The blend happens in the comb, not in the tank. We only extract it as it is — we do not add meadow or forest honey to make one year resemble the last.
The ratio of meadow to honeydew shifts from year to year with the summer. So one jar does not match the previous one, and that is not corrected.
