Meadow and forest in one jar.

On the slopes of Čemernik the meadow and the forest sit side by side, and in a single day the bees work both blossom and honeydew. The two flows join in the comb while the honey is still in the hive.

How it tastes

Full, round, with a dark finish.

In the mouth
It opens floral and warm, like a meadow, and closes on the resinous note of the forest.
Goes with
A spoonful in the morning, and it works in a marinade too, since it takes heat better than acacia.
Crystallisation
Three to six months, a finer grain than pure meadow honey. Returns to liquid at 40 °C, no higher.

How the blend comes about.

The blend happens in the comb while the bees are working, and we extract it as it turned out that year. Nothing is added to it after extraction.

The ratio of meadow to honeydew shifts from year to year with the summer, so jars from two seasons differ in colour and in taste.

The 980 g jar is 1.400 RSD, about 1.429 RSD/kg. Smaller jars come out dearer per kilogram, because the packaging costs the same however much honey goes inside. The comparison with the other varieties is on the price list.

Meadow honey comes from flowers on the lower meadows and usually from a single flow. The Vlasina honey is gathered at around 1 200 m, where in one flow the bees find both mountain flowers and honeydew from conifers, so a blend forms in the comb and we extract it as it turned out that year.

The ratio of the floral part to the honeydew shifts from year to year with the summer up on the mountain. A jar from one season can be visibly lighter than a jar from another, and the difference carries into the taste.

After extraction the honey is not blended or worked on to even the colour out, so what the bees brought in that year reaches the jar as it is.

A sealed jar at room temperature, away from the sun, keeps for years without spoiling, because there is too little water in honey for anything to grow in it. It darkens and sets over time, which is normal.

The one thing that genuinely harms honey is moisture, so the spoon should always be dry. More on this in the note on storing honey.
