Acacia taken at two stops.
Acacia flowers for about ten days in one place, so the first crop is taken down at Vlasotince and the hives then move to Svođe, which is higher and where the same blossom opens a fortnight later.

How it tastes
Sweet straight away, no bitterness at the end.

- Clean and mild, with only a faint floral scent, and it leaves no trace in the throat.

- In tea that is not boiling, on bread with butter and in yoghurt, since it is mild enough that whatever is underneath still comes through.
- Crystallisation
- The slowest of them all. Stays clear for up to a year thanks to its high fructose share.
Where those two weeks come from.
With the hives in one place the acacia flow lasts about ten days a year. At Svođe, some two hundred and thirty metres higher, the same acacia opens later, so the same flow starts over there.
The move happens at night, when every bee is inside. Loading runs up to three hours, and the entrances are closed only once the last bee is back, because any group left at the old site is lost.
The largest jar is the best value: 980 g costs 1.300 RSD, which works out at about 1.327 RSD/kg. Smaller jars cost more per kilogram, because the glass, the lid and the packing cost the same when there is only 300 g inside. All three sizes sit side by side on the price list.
A 300 g jar is enough to taste it and see whether it suits you. Anyone who already knows they like acacia takes the 980 g, since it is the best value per kilogram. The middle jar of 500 g is handy when it goes as a gift alongside something else.
Honey has two main sugars, fructose and glucose, and crystals form out of the glucose. Acacia honey holds markedly more fructose than glucose, so crystals struggle to take hold and a jar can stay clear for a year and longer.
When it does set, it is the same honey, and it returns to liquid in water below 40 °C. There is more on this in the note on crystallisation.
Acacia flowers briefly, in May and June, and it is extracted straight after that flow, so there is only one lot a season. How much there is depends on how many days stayed calm and warm while the blossom lasted, and rain or wind across those few days can cut the harvest noticeably.
