Vlasotince and Svođe · 270—500 m · May—June
The same acacia, taken twice.
Acacia flowers for ten days and that is all. So we follow it: first down at Vlasotince, then the hives move to Svođe, where it is higher and the same blossom runs two weeks late.

How it tastes
Sweet straight away, no bitterness at the end.
- In the mouth
- Clean and mild, almost no floral scent. Leaves no trace in the throat.
- Goes with
- In tea that is not boiling, on bread with butter, in yoghurt. It never covers what it goes with.
- Crystallisation
- The slowest of them all. Stays clear for up to a year thanks to its high fructose share.

Two extra weeks, bought by moving.
Had the hives stayed in one place, there would be ten days of acacia a year. Moving to Svođe, some two hundred and thirty metres higher, starts the same flow again: acacia blooms later the higher you go.
The move happens at night, when every bee is inside. Loading runs up to three hours, and the entrances are closed only once the last bee is back — otherwise she stays at the old site and is lost.
