This honey does not come from a flower.
Honeydew is what aphids leave on needles and leaves. Bees collect it once the flowers are gone. That is why it is not there every year.

How it tastes
Less sweet than you expect.
- In the mouth
- Dense, dark, with a note of resin and something baked. Few people like it at first, then they come looking for it.
- Goes with
- With mature cheese and walnut. In red wine in winter. Not for pancakes.
- Crystallisation
- Almost never. Stays dense and dark for years thanks to its low glucose share.

The year there is none.
Honeydew depends on aphids, and aphids depend on the weather. There can be plenty two years running, then nothing for three.
In the years it fails we do not top the jar up with anything else. That summer there simply is no forest honey, and the list says so.
