The honey that honeydew brings.

Honeydew is the sweet film aphids leave on oak and maple leaves, and the bees collect it once the flowers are gone. How much there is depends on how many aphids the year produced, so this honey does not appear in every season.

How it tastes

Less sweet than the other two.

In the mouth
Dense and dark, with a note of resin and something baked.
Goes with
With mature cheese and walnut, and in red wine in winter. For pancakes it is too heavy.
Crystallisation
Very fast, within three to six months. It rarely reaches spring still liquid.

The seasons it skips.

Honeydew depends on aphids, and there are as many of those as the weather that year allows. It can be plentiful two seasons running and then absent for three.

In a season when it fails, the jar is not topped up with another variety. Forest honey simply is not on the list that year.

The 980 g jar is 1.400 RSD, about 1.429 RSD/kg, the same as the Vlasina honey. Smaller sizes cost more per kilogram because of the packaging. It is all on the price list.

Honeydew is the sweet film aphids leave on the leaves of oak, maple and hornbeam. The bees collect it once the flowers are gone, so the honey made from it does not come from blossom. Under European Union rules this honey is formally told apart from blossom honey by an electrical conductivity above 0.8 mS/cm, which comes from its higher mineral content.

There is as much honeydew as there are aphids in a given year, and there are as many of those as the weather allows. It can run two seasons in a row and then be absent for three.

In a season when it fails, the jar is not topped up with another variety. Forest honey simply is not on the list that year.

The darker colour of honeydew honey goes together with a higher mineral content, which is also measured as a higher electrical conductivity. That carries into the taste, which is less sweet and denser than acacia.

Which one suits whom is a matter of taste. Anyone used to mild honey takes a while to get on with honeydew, and anyone who likes it strong rarely goes back to acacia.
